Savory gooseberry sauce

My husband Steven could honestly be a professional chef if he wanted to be. We made this at our Airbnb in Minneapolis last week, and it received glowing reviews from all the other guests who happened to pass through the kitchen. If you’ve ever felt deprived on a whole-foods diet, this sauce is for you!

Prep time: 10 minutes

Cook time: 10-15 minutes

Makes: 6 servings

Allergens: none

Ingredients:

3 Tbsp extra virgin olive oil

1 pint cape gooseberries (aka goldenberries), halved*

1 pint blueberries, whole

2 inches fresh ginger root, peeled and diced

1 medium head garlic, diced

1 pinch cinnamon

Sea salt

Black pepper

*Note: gooseberries are in the nightshade family, for those who have intolerances or who are on the AIP diet!

Directions:

  • Add olive oil to a small saucepan.
  • Sauté garlic and ginger about five minutes on medium heat.
  • Add the chopped gooseberries, blueberries, and cinnamon, and sauté for another 3 minutes, stirring regularly. Add salt and pepper to taste.
  • Simmer for another 5 minutes before serving. Alternatively, spread over roast salmon or beef for the last 10 minutes of roasting in the oven.
