Herb-roasted salmon

This is my favorite dish to make on a busy night because it only takes 5 minutes to prep and throw in the oven! Plus, salmon is incredibly delicious, nutrient-dense, and a great source of omega-3 fats.

Prep time: 5 minutes

Cook time: 20 minutes

Makes: 4 servings

Allergens: fish

Ingredients:

24 oz wild-caught salmon

½ cup olive oil

1 tbsp dried basil

1 tbsp dried thyme

Sea salt

Black pepper*

Directions:

  1. Preheat oven to 400°
  2. Lay out salmon in a large 9 x 13” baking dish (skin side down if it still has the skin).
  3. Pour the olive oil over the surface of the fish. Sprinkle dried basil and thyme on top and add sea salt and pepper to taste.
  4. Bake for 16-22 minutes at 400°F until the fish flakes a bit when you prod it with a fork.
