Choconana-tain Cake

 

NOMSS. That is all.

Prep time: 20 minutes

Cook time: 30 minutes

Makes: 8 x 8 inch pan

Allergens: gluten-free, grain-free, nut-free, egg-free

Ingredients:

2 plantains (ripe preferred)

3 bananas (ripe preferred)

½ can of coconut milk – save remainder for the frosting

1 1/2 Tbsp vanilla

1/2 tsp baking soda

1 3/4 cups of cocoa powder

1/2 cup coconut flour

3 Tbsp pure maple syrup

Directions:

  • Preheat the oven to 350°F
  • Blend the plantains, bananas, coconut milk, vanilla, and baking soda together using a blender or electric mixer.
  • Add cocoa and coconut flour and mix well.
  • Grease an 8×8 inch pan with butter or coconut oil. Pour the batter in.
  • Bake at 350°F for 30-40 minutes. A fork should come out clean.

While it’s baking, keep the dirty bowl or blender and use it to make the frosting!

Ingredients for the frosting:

1 ripe banana

1/2 can of coconut milk

1 Tbsp vanilla

3 Tbsp maple syrup

1 cup of cocoa powder lots of cocoa

¼ cup of coconut flour (optional to make thicker frosting)

Directions:

Mix all ingredients together in a blender. Spread on the cake after it cools.

Note: This cake keeps best refrigerated, if there’s any left!
