Garlic thyme roasted carrots (AIP friendly)

 

These are like candy. And so easy to prep!

Prep time: 5 minutes
Cook time: 45 minutes
Makes: 4 servings
Allergens: none

Ingredients:
2 pounds fresh carrots
Garlic powder
Thyme
Sea salt

Directions:
1) Preheat oven to 400°F.
2) Cut the carrots however you like. You can even throw them in whole, although they will take longer to cook through and won’t get as crispy. I like to cut the tops off, cut them in half once lengthwise, once width-wise, and then once lengthwise again until they are in 3 inch long strips.
3) Toss the carrots in olive oil, garlic powder, thyme, and salt.
4) Lay them out on a parchment paper-lined baking sheet. I like to use this brand, which is compostable and chlorine-free.
5) Bake at 400°F for about 45 minutes, or until desired tenderness or crispiness. Shuffling them around halfway through will help them to cook more evenly.
